Description

Brunch time! Switch up the classic eggs benedict by topping english muffin with smoked salmon and dill. 

Ingredients

4  
english muffins
8 slices
Smoked Salmon
4  
eggs (poached)
1 bunch
sliced scallions (to garnish)
1 tablespoon
chopped fresh dill (to garnish)
   
<<>>hollandaise sauce<<>>
1  
egg yolk
1 teaspoon
water
1 teaspoon
lemon juice (from 1 lemon)
1 tablespoon
Salt
1 pinch
kosher salt
1  
stick of butter

Instructions

Toast the english muffins, top each english muffin with 2 slices of smoked salmon. poach the egg and top over the salmon. Drizzle the hollandaise sauce over the egg, garnish with dill and scallions.

Hollandaise Sauce:

Combine egg yolk, water, lemon juice, and a pinch of salt in a large bowl. Melt the butter in a small sized sauce pan on high heat. Place butter in a liquid measuring cup. Use a blenderto mix the ingredients in the large bowl, while blending, slowly pour the butter into the mixture. The sauce should be thick and creamy. Season with a pinch of salt. Use immdeiately or keep warm in a pot on a stove top (Sauce cannot be cooled and reheated)
